The Center for Culinary Excellence (CCE) is home to one of <a href="https://green.nd.edu/news/new-system-to-tackle-nonconsumable-food-waste-contribute-to-clean-energy-needs-of-local-farm/">three Grind2Energy (G2E) food waste systems</a> that collects prep scraps and uneaten food that cannot be donated into its Grind2Energy (G2E) system for anaerobic digestion that is used to power a local dairy farm. G2E reduces non-consumable food waste from entering the landfill and prevents methane emissions, a potent greenhouse gas emitted from decomposing food. The North and South Dining Halls are home to the remaining two G2E locations.
